滑滑嫩嫩的水豆腐,配上稍稍辛辣的葱花,还有浓郁的炸小葱油,简单的以酱清和些许蚝油提味,就是一道超下饭有经济实惠又营养的素食。家里备着炸小葱油就可以在忙碌的天,一眨眼的功夫就快速上菜。

Ingredient 材料
1. Silky Smooth Tofu 水豆腐 1 pack
2. Spring onion 青葱 3 stalks
3. Fried Shallot Oil (to taste) 炸小葱油
4. Light Soy Sauce 酱清 3 tblsp
5. Vegetarian Oyster Sauce/ Oyster Sauce 素食蚝油/ 蚝油 1 tblsp
Preparation 准备材料
Clean spring onion, slice thinly. 洗干净青葱,切成葱花。
Bring to boil a pot of water in steaming pot. 蒸锅注入水,烧开备用。
Method 制作方法
1. Place tofu in steaming dish. 将水豆腐倒扣入碟里。
2. Brush some vegetarian oyster sauce/ oyster sauce on tofu. 抹上适量的素食蚝油或蚝油。
3. Sprinkle generous amount of sliced spring onion. 撒上大量葱花。
4. Season with light soy sauce, please take into considerations that tofu will release liquid during steaming. 浇上足够的酱清,酱清的分量需考虑到咸度会被蒸豆腐所的水稀释。
5. Sprinkle sparingly with fried shallot oil to enhance the fragrance, steam when water is boiling. 淋上炸小葱的油增添香味,蒸锅里的水沸腾就可以把豆腐放进去蒸。
6. Steam until the spring onion got rid of its spiciness, but colour still remains beautiful. 蒸到葱花的辛辣味尽消,但颜色依然翠绿,就可以出锅了。
7. Once bring out the tofu, garnish with generous amount of crispy fried shallots, serve hot. 出锅后在豆腐上铺上酥脆的炸葱,趁热上菜。
