It is yam season, I am tempted to cook yam rice as it is one of the comforting staples that I tend to miss.

Ingredients
1. Chicken breast/ thigh 鸡胸/ 腿
2. Yam 芋头
3. Dried Shrimp 虾米
4. Chinese Cured Bacon 腊肉
5. Shallot 小葱头
6. Jasmine Rice 香米
Seasoning
1. Soy Sauce 生抽
2. Selected Dark Soy Sauce 老抽
3. Pink Salt 岩盐
4. Sesame Oil 黑芝麻油
5. Brown Sugar 赤砂糖
6. Corn Starch 薯粉

Remove chicken skin, diced chicken breast/ thigh. Place chicken in a bowl, add seasoning 1-6, mix well, chilled for at least 10 minutes before used.
Peel the skin off yam, cut into desired size and shape. Soak dried shrimp before used, rinse with water. Skinned and slice shallots.
Soften Chinese cured bacon by soaking it in warm water for 10 minutes. Drain the water, and slice to desired size.
Soak dried shrimp for a while, drain the water away and wash. Let dry before use.
